2 cups fresh cranberries
1 cup sugar
1 cup water
1/3 cup shortening
2/3 cup sugar
1 3/4 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup mashed bananas
1/2 cup coarsely chopped nuts
cranberries, 1 cup sugar and 1 cup water.
Cook over medium heat for 5 minutes or until cranberries begin to
pop. Drain and set aside.
Cream shortening with sugar and eggs.
Combine flour, baking powder, salt and baking soda; add to creamed mixture
alternately with bananas.
Fold in cranberries and nuts. Bake
at 350 degrees in greased and floured 9 x 5 x 3-inch loaf pan for 60-65
minutes or until toothpick comes out clean.
Cool for 10 minutes before removing from pan.
Makes 1 loaf.
